### Ingredients

- 4 eggs

- 1 cup tamarind extract (soak tamarind in water and extract the juice)

- 2 onions, finely chopped

- 2 tomatoes, finely chopped

- 2 green chilies, slit

- 1 teaspoon ginger-garlic paste

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1 teaspoon fenugreek seeds

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon coriander powder

- 1 teaspoon garam masala powder

- A few curry leaves

- 2 tablespoons oil

- Salt to taste

- Fresh coriander leaves for garnish


### Instructions


1. **Boil the Eggs:**

   - Boil the eggs until hard-boiled. Let them cool, peel the shells, and make small slits on them.


2. **Prepare the Base:**

   - Heat oil in a pan. Add mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter.

   - Add curry leaves, green chilies, and onions
