Here's a simple recipe for Chicken Pulao, a fragrant and flavorful one-pot dish:
### Ingredients
- **For the Chicken Marinade:**
- 500g chicken (cut into pieces)
- 1 cup yogurt
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- **For the Pulao:**
- 2 cups basmati rice (rinsed and soaked for 30 minutes)
- 3 tablespoons ghee or oil
- 2 large onions (thinly sliced)
- 2 tomatoes (chopped)
- 1 tablespoon ginger-garlic paste
- 2 green chilies (slit lengthwise)
- 1 teaspoon cumin seeds
- 4-5 cloves
- 2-3 cardamom pods
- 1 cinnamon stick
- 2 bay leaves
- 1 teaspoon garam masala powder
- 1 teaspoon coriander powder
- 4 cups water or chicken broth
- Salt to taste
- Fresh coriander leaves (chopped, for garnish)
- Fresh mint leaves (optional, for garnish)
### Instructions
1. **Marinate the Chicken:**
- In a bowl, mix the chicken pieces with yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, and salt.
- Let it marinate for at least 30 minutes, or preferably for a few hours.
2. **Prepare the Rice:**
- Rinse the basmati rice under cold water until the water runs clear.
- Soak the rice in water for about 30 minutes, then drain.
3. **Cook the Chicken:**
- Heat 2 tablespoons of ghee or oil in a large pot or pressure cooker.
- Add the marinated chicken and cook until the chicken is browned and cooked through. Remove the chicken and set aside.
4. **Make the Pulao:**
